Curried Chicken Salad


Ingredients

1 cup walnut halves
4 cups diced cooked chicken (about 12 oz.)
1 cup seedless red grapes, halved crosswise
large celery rib, halved lengthwise and thinly sliced crosswise
scallions, trimmed and thinly slice
1/2 cup mayonnaise
1/3 cup plain low-fat yogurt or sour cream
1 tablespoon distilled white vinegar
1/4 teaspoon curry powder
1/4 teaspoon pepper
radicchio cups
4 cups mixed baby greens (about 3 oz.)

Preparation

Preheat oven to 375°F. Spread walnuts on a shallow baking sheet and roast in oven until toasted, about 10 minutes. Let cool.
Coarsely chop walnuts and transfer 3/4 cup of them to a bowl with chicken, grapes and celery; toss.
In a small bowl, whisk together scallions, mayonnaise, yogurt, vinegar, curry powder and pepper. Scrape mixture over chicken mixture and toss well.
To serve, arrange a radicchio cup in center of a plate. Fill radicchio with chicken salad. Arrange greens around radicchio. Sprinkle remaining nuts on top of salad.

Grilled Pork Chops




INGRDIENTS

1⁄2cup water
1⁄3cup light soy sauce
1⁄4cup vegetable oil
3tablespoons lemon, pepper, and salt seasoning
2garlic cloves, minced
6pork loin chops, fat removed

DIRECTIONS

In deep bowl mix all marinade ingredients.
Marinate at least 2 hours.
Remove from marinade and cook over medium-high heat on greased grill for no more than 15 minutes or until done. Cooking time for second side is shorter by 1-2 minutes. 3/4" or thinner, 5-6 minutes maximum per side, thicker than 3/4" 6-7 minutes maximum per side. DO NOT OVER_GRILL, chops will become tough. After 2 minutes grilling on a side, rotate chops 45 degrees for even cooking. Turn over when juices pool on upper surface and meat appears to be cooked half-way through.

Coffee-Molasses Marinated Pork Chops


Ingredients

·         1 cup strong brewed coffee
·         1/4 cup molasses
·         6 fresh thyme sprigs
·         2 tablespoons cider vinegar
·         1 tablespoon Dijon mustard
·         2 garlic cloves, minced
·         1/2 teaspoon salt
·         1/2 teaspoon lemon-pepper seasoning
·         1/2 teaspoon ground ginger
·         4 bone-in pork loin chops (1 inch thick)


Directions

  1. In a large bowl, combine the first nine ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add the pork chops. Seal bag and turn to coat; refrigerate at least 2 hours. Cover and refrigerate remaining coffee mixture until ready to cook.
  2. For glaze, place remaining coffee mixture in a small saucepan. Bring to a boil; cook until liquid is reduced to about 1/2 cup.
  3. Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill chops, covered, over medium heat or broil 4-5 in. from the heat 4-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 145°; medium, 160°). Let stand 5 minutes before serving. Spoon glaze over chops. Yield: 4 servings.

Pork Fry – Kerala Style ‪#‎pigzees‬ ‪#‎porkfry‬


Ingredients for marination:
Pork Meat, Turmeric Powder, Chilly Powder, Green Chilly, Ginger, Pepper Powder, Salt, Masala, Onion, Salt, Garlic, Coriander,
Other ingredients: Coconut, Curry Leaves
Method:
• Cut cleaned pork into cube size pieces. Marinate pork with ingredients listed under marination. Add 2 tbsp of water to this and cook covered till the pork is done. In a regular pan, it might take around 45 minutes. In pressure cooker, it would be done in 1-2 whistles.
• Drain the excess oil out of the pan. Don't forget to do this. Otherwise the final dish would be very oily.
• Heat oil in a pan and fry coconut pieces until it becomes golden brown colour. Keep it aside. Another alternative for coconut pieces is grated coconut. If you are using grated coconut, fry 3/4 cup of grated coconut until it gets brown colour. Grind it well. The authentic Thrissur style pork preparation is with grated coconut.
• Heat oil in a pan. Saute sliced small onions, salt and lots of curry leaves. Saute it until onion turns golden brown. Then add crushed garlic and ginger paste. Saute it well.
• Add chilly powder, coriander powder and garam masala. Saute it well and if required add more oil.
• Now add cooked pork and fried coconut pieces/ grinded grated coconut prepared in step 3. Adjust salt. Cook on low flame for around 15 - 20 minutes. If required, add oil in between. Stir it until it becomes black in colour.
Serve with rice.

Asian and Mexican flavours collide with excellent results in this seven-minute dish: The pork first cooks in a ginger-soy mixture, then is doused with a sweet cilantro salsa. If you like heat, be sure to use an extra-spicy salsa. If you really like heat, chop a jalapeƱo or a couple serranos and add to the salsa.
Ingredients:
1 tablespoon low-sodium soy sauce
1 teaspoon bottled minced fresh ginger
1 teaspoon bottled minced garlic
1 teaspoon canola oil
1 (1-pound) pork tenderloin, trimmed and cut crosswise into 12 (3/4-inch-thick) slices
1/3 cup bottled salsa
1 tablespoon seedless raspberry preserves
2 tablespoons chopped fresh cilantro
Preparation:
Combine first 3 ingredients in a bowl.
Heat oil in a large non-stick skillet over medium-high heat.
Flatten each pork piece to 1/2-inch thickness using your fingertips.
Add pork to pan; spoon soy sauce mixture evenly over pork slices.
Cook 3 minutes or until browned.
Turn pork over; cook 3 minutes or until done.
Remove from pan.
Add salsa and preserves to pan; increase heat to medium-high. Cook 30 seconds or until slightly thick, stirring constantly.
Serve pork with salsa mixture, and sprinkle with cilantro.
